Carrot Ginger Soup

Ingredients:

  • 1 lb carrots, peeled and sliced
  • 1 onion, diced
  • 2-inch piece of ginger, minced
  • Vegetable broth (4 cups)
  • Coconut milk (optional, 1 cup)
  • Olive oil
  • Salt, pepper, and cumin

Instructions:

  1. Sauté onions and ginger in olive oil until fragrant.
  2. Add carrots and vegetable broth, bring to a boil, and simmer until carrots are soft (about 20 minutes).
  3. Blend until smooth and add coconut milk for extra creaminess.
  4. Season with salt, pepper, and cumin.

These soups are great for freezing, and they’re filling and nutrient-dense, perfect for cozy
autumnal/ winter meals!
