Spicy Black Bean Soup

Ingredients:

  • 2 cans black beans, drained and rinsed
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red pepper, diced
  • 1 can diced tomatoes
  • Vegetable broth (3 cups)
  • Cumin, smoked paprika, chili powder
  • Lime juice and coriander for garnish
  • Olive oil

Instructions:

  1.  Sauté onions, garlic, and bell peppers until soft.
  2. Add black beans, tomatoes, broth, and spices.
  3. Simmer for 20-30 minutes.
  4. Blend part of the soup for a creamy texture, then stir back into the pot.
  5. Garnish with lime juice and coriander.
