Lentil Soup

Ingredients:

  • Red or green lentils (1 cup)
  • Diced carrots, celery, and onions
  •  Garlic (2-3 cloves, minced)
  •  Vegetable broth (4 cups)
  •  Diced tomatoes (1 can)
  •  Spinach or kale (1-2 cups)
  •  Olive oil
  •  Thyme, cumin, and bay leaf
  •  Turmeric (0.5tsp)
  •  Salt and pepper to taste
  •  Lemon juice (optional for brightness)

Instructions:

  1. Sauté onions, garlic, carrots, and celery in olive oil until soft.
  2.  Add lentils, broth, tomatoes, and spices.
  3.  Bring to a boil, then simmer for 25-30 minutes until lentils are tender.
  4.  Stir in greens and let wilt.
  5.  Season with salt, pepper, and a splash of lemon juice before serving.
